TURMERIC & ROASTED PEACH COCONUT CURRY WITH BAKED TOFU

Ingredients (serves 2): 1 block tofu, pressed
3 peaches (quite firm, not too ripe)
1 courgette
2 red onions
1 bunch coriander
1 can coconut milk
3 cloves garlic
5-7 curry leaves
1/2 tsp fenugreek seeds
1 tsp turmeric
1/2 tsp ground coriander
1/3 tsp ground nutmeg
1/4 tsp ground cardamom
1/4 tsp chili powder
1 tsp cornstarch
4 tbsp olive oil
pinch asafoetida
salt and pepper to taste
black sesame seeds to garnish

1. Bake the tofu and veg. Preheat the oven 200 C. Slice the courgette, peaches, onions and tofu into the bite size chunks/ wedges. Toss with olive oil, salt and pepper. I like to arrange the different veg on the individual trays so they have more room to breathe in the oven and turn out more crispy! All veg and tofu will take around 30 minutes to bake.
2. Make the curry sauce. In the deep frying pan, add 2 tbsp of olive oil, chopped garlic, curry leaves and fenugreek seeds, fry for 2 minutes. Add turmeric, ground coriander, nutmeg, cardamom, and chili powder, fry for another 2 minutes. Add coconut milk, salt and pepper. Cook on high heat for 10 minutes, until the coconut milk thickens a bit. Mix cornstarch with 3 tbsp of cold water, add to the curry, stir until the sauce thickens. Add chopped coriander.
3. To serve, arrange the baked veg and tofu on a plate, pour the curry sauce over it. Sprinkle with black sesame seeds and fresh coriander. This curry pairs really nicely with black rice, but any rice or noodles will do 🙂
