Today was a Ratatouille Sunday for us! While the lil’ one watched the movie, I tried my hands at the dish expecting it to be pleasing to the eye, but having no significant appeal to the gustatory senses. But how wrong was I! Indeed I was mesmerized by the multitude of colors 🌈 in the dish, but what truly bawled me over was the medley of flavors of those tender vegetables sitting on a bed of homemade tomato sauce, sprinkled with fresh herbs’ dressing and baked to perfection!! If you, like me, had always discounted this dish as being pretty but tough-to-pull-together-not-so-yummy one, order those zucchinis, squashes and eggplants NOW and try it out! I promise you won’t be disappointed.
My recipe was inspired by Ratatouille Recipe by @buzzfeedtasty, with improvisation on ingredients’ proportions, homemade tomato sauce, and making one batch with cheese which although not the best-looking, turned out to be quite flavorful.
