Thai Red Curry Noodle Soup with Crispy Tofu 🌱⁣

We ADORE Thai food, so we’re very happy that we’ve found a quick and simple way to create a Thai inspired dish at home!⁣

This recipe uses a ready made paste, so the ingredients list isn’t too complex. It’s also packed full of veggies and all made in one pan. Easy peasy ☺️⁣

(serves 2-3)⁣
Ingredients⁣
1 pack extra firm tofu (we used @tofooco) cubed⁣
4 cloves garlic, chopped⁣
Chunk ginger, grated⁣
1 tbsp soy⁣
5 spring onions, sliced⁣
4 tbsp Thai red curry paste⁣
2 small carrots, sliced⁣
6 mushrooms, quartered⁣
1 red pepper, diced⁣
1 green pepper, diced⁣
1 pak choi, chopped⁣
300 ml vegetable stock⁣
400ml tinned coconut milk⁣
2 wholewheat noodle nests⁣

🥄 Method⁣
🌿 Heat 1 tbsp of oil and fry the tofu until golden. Add the garlic and ginger, cook for 1 minute then add the soy sauce. Stir to coat the tofu.⁣

🌿 Remove the tofu from the pan and set aside. Fry the spring onions then add the Thai red curry paste, coconut milk, vegetable stock and chopped vegetables. cover and simmer for 5 minutes.⁣

🌿 Add the noodles then cover and simmer again for 8-10 minutes, breaking up noodles every now and again.⁣

🌿 (Optional) serve with a sprinkle of sesame seeds, crushed chilli flakes and sliced spring onion.
