Rice cooker coconut rice!

It’s coconutty, it’s ricey, it’s limey and delicious. And it’s so easy.

I used to be a rice cooker hater until I realised all the wonderful you can create with it. Plus it gives you perfect rice every time. No need to measure or fuss, just add rice, place your finger on top of the rice and then add water (or other liquid) up to your first knuckle. Perfect. Easy. Perfectly easy.

1 cup jasmine rice
1 cup full fat coconut milk
1/2 Tbl vegan fish sauce (can sub soy sauce)
1 tsp coconut sugar (can sub maple syrup or other sugar if choice)
Juice of 1 lime
1/2 cup roughly chopped fresh coriander/cilantro (optional)

💚 Add the rice, coconut milk, fysh sauce and sugar to your rice cooker. Place your finger so it’s standing on top of the rice and add water until the liquid meets your first knuckle. Switch your rice cooker to cook and let it do it’s thing (remove finger before cooking)

💚 Once the rice is cooked, stir through the lime juice and coriander and enjoy!

I added mine to a grain bowl with crispy tempeh, satay sauce and greens 🥰
