✨Pulled Jackfruit Sandwich + Homemade BBQ Sauce✨
Pretty soon after first going vegan, I discovered the wonder that is jackfruit, a great vegan meat substitute! You can use it in many different recipes, including this pulled jackfruit sandwich, which is one of my faves! You can totally use store bought BBQ sauce for the jackfruit, but this homemade version is really quick and easy to make as well. A super tasty and flavourful meal, I highly recommend you give it a try! 😍
🔸2 cans of young jackfruit
🔸1 small sweet onion, chopped
🔸6 bread rolls
🔸240 g ketchup
🔸1 tsp mustard
🔸3 tbsps apple cider vinegar
🔸3 tbsps maple syrup
🔸1 tbsp soy sauce
🔸1 tbsp paprika, 1 tsp cumin, 1 tsp garlic powder, 1 tsp salt, cracked black pepper
▪️200 g white cabbage, shredded
▪️200 g red cabbage, shredded
▪️200 g carrots, grated
▪️handful of fresh parsley
▪️125 g vegan mayo
▪️1 tbsp apple cider vinegar
▪️1 tbsp maple syrup
▪️1/2 tbsp mustard
▪️salt & pepper
🔸Add all BBQ sauce ingredients to a small pot & whisk together over low heat. Let simmer for 10 minutes.
🔸Drain & rinse jackfruit really well.
🔸Add some oil to a pot, sauté onion until translucent.
🔸Add jackfruit, 250 ml of BBQ sauce and 150 ml of water, stir well to combine, cover the pot and leave to cook for 20 mins, stirring regularly.
🔸Shred the jackfruit with two forks or a potato masher, season with s&p to taste.
🔸Turn up the heat and crisp up the jackfruit mixture for 10 more mins, stirring frequently.
🔸Mix in any additional BBQ sauce left.
▪️Combine all coleslaw ingredients in a bowl.
Serve the jackfruit with the coleslaw on a bread roll with some (sweet) potato fries on the side and enjoy! 🎉
