NEW on the blog today is this simple Tofu Tikka Masala! It’s a take on my famous loaded veggie tikka masala and I’m excited for you to make this one. It comes together quickly and is GREAT for meal prep (somehow it tastes even better the next day!).⁠⠀

2 (14-ounce) blocks of firm or extra firm tofu⁠⠀
Large yellow onion, divided⁠⠀
2 cloves of garlic⁠⠀
1 inch of ginger, peeled⁠⠀
10 sprigs of fresh cilantro⁠⠀
2 tablespoons of olive oil, divided⁠⠀
1/2 teaspoon of cumin⁠⠀
