Look what i rustled up for dinner! 😁 just kidding, i’m currently eating crisps and cookies because i was too lazy to cook anything, but i did make this veg & noodle stir fry for @vivavivera a while back (using their plant burgers), and i sure wish i was eating it again right now! 😅

the stir fry has red bell pepper + carrot + tenderstem broccoli + sugar snap peas + baby corn + noodles + strips of vegan burger in a garlic & lime sauce and garnished with fresh lime, coriander, basil, and roasted sesame seeds. 🌱🥢 (feel free to sub in whatever protein you like- would be great with tofu, tempeh, vegan chicken, or just veg and noodles only!) 😘

garlic & lime stir fry sauce:
1/4 cup tamari or soy sauce
1/4 cup brown sugar
5 tbsp lime juice
1/2 cup water
3 cloves garlic, minced
1 tbsp grated ginger root
1 tbsp sesame oil
cornflour slurry (2 tbsp cornflour + 2 tbsp cold water, mixed separately then added to sauce)

mix everything together and either heat separately until it thickens and then add to your stir fry, or turn up the heat on your stir fry just before adding the sauce so it will start to boil and thicken straight away. once it thickens reduce heat and stir make sure veg and noodles are well coated.
