🍅Tomato tartare is simple, elegant and a great appetizer
▪️1 cup diced tomato, about 2 small size tomatoes – I used cherry tomatoes
▪️⅓ cup arugula
▪️6-7 thin slices of cucumber
▪️2 tablespoons olive oil
▪️2 tablespoons scallions, chopped (green part only)
▪️Salt and pepper .
Mix everything in a high speed blender. Pass the dressing through a strainer and season to taste
Dice tomatoes and remove the seeds. Place tomatoes in a strainer and add salt to taste. Let it rest for about 10 minutes to remove excess moisture.
Place a bed of sliced cucumber on a serving plate. If you don’t have a round mold to make tomato towers just use a 1 cup measurement cup, place tomatoes inside and press. Get the measuring cup as close as you can to the plate and flip it gently and quickly. Add arugula on top and drizzle a little bit of seasoned oil on top and on plate
