Serves 4
What you’ll need for the roasted veggies:
▪2 cups broccoli florets
▪2 carrots, cut in 1⁄3” slices
▪ 3 cups brussel sprouts, halved
1⁄2 purple onion, cut in wedges
▪2 tablespoons olive oil
▪1 teaspoons balsamic vinegar
▪Salt and pepper to taste
Add all vegetables to a bowl and toss them with olive oil, balsamic vinegar and salt and pepper. Adjust seasoning to taste

What you’ll need for the roasted potatoes:
▪20 oz potatoes, halved or quartered
▪1 tablespoon olive oil
▪1⁄4 teaspoon dry oregano
▪1⁄4 teaspoon dry thyme
▪1⁄4 teaspoon dry rosemary
▪Salt and pepper to taste
Add all ingredients to a bowl and combine well. Adjust seasoning to taste
