πŸ“What you’ll need
β–ͺ️Leafy greens, I used arugula
β–ͺ️Roasted squash, I used some butternut squash leftovers

β–ͺ️Sweet apple, sliced

β–ͺ️Carrots peels
β–ͺ️Roasted onion slices
β–ͺ️Roasted brussel sprouts
β–ͺ️Tofu chips

β–ͺ️¼ cup olive oil
β–ͺ️1 tablespoon apple cider vinegar
β–ͺ️1 teaspoon dijon mustard
β–ͺ️1 teaspoon orange or lemon juice
Salt and pepper
Mix all dressing ingredients and whisk until well combined. Adjust seasoning to taste

Preheat the oven at 400F. Slightly brush onions, squash, and brussel sprouts with avocado oil Roast squash for about 20 minutes or until tender and leave onions and brussels sprouts in the oven fora about 10 minutes or until roasted
.
To make tofu chips, finely slice drained tofu and place them in the oven or airfryer at 400F for about 12 minutes. I don’t add any oil or seasoning to the chips but you can add any herbs you like
.
