SPICY ROAST TOMATO SOUP 🍅🌶
A great big bowl of warming soup was just what I needed today! The roast veg packs in the flavour and the lentils make it into a proper hearty meal. All you need is some crusty bread and your sorted 🥄
400g tomatoes (I use a mix of sizes, whatever you’ve got in the fridge)
1 large red pepper
100g red lentils
750ml veg stock
1 tsp smoked paprika
1 tsp chilli flakes
Wash and roughly chop the tomatoes and pepper. Spread over a baking tray and season with salt and pepper. Drizzle with olive oil and toss to coat.
Roast at 200°C for 25 mins, checking half way through to make sure nothing is sticking.
Remove the veg from the oven and add to a large pot with the stock, lentils, paprika and chilli flakes. Simmer for around 20 minutes until the lentils are cooked and then blend until smooth 🍅🥄
