BRUSCHETTA PASTA 🍝🧄

All the delish flavours of bruschetta in one big bowl of pasta 😍

Roasted tomatoes, olive oil, garlic, toasted garlicky breadcrumbs and basil – you can throw it together in less than half an hour 😋

Recipe serves 2
300g cherry/plum tomatoes
3 cloves garlic
2 tbsp extra virgin olive oil (plus more to drizzle)
1 slice of crusty bread
Handful of basil
Pasta for 2
Salt and pepper

Put the pasta on to boil.

Roughly chop and put the tomatoes, spread over a baking tray, drizzle with olive oil and season with salt and pepperin to roast at 180°C.

Crush the garlic and mix with the 2 tbsp of olive oil.

Grate the bread into a frying pan and add a drizzle of oil and the garlic granules. Toast for a couple of minutes until crisp and golden.

Roughly drain the pasta and add back to the pot with the olive oil and garlic mix and roast tomatoes. Season to taste. Serve and top with the garlic breadcrumbs and roughly chopped basil 😋
