To prepare Tofu:
Drain an extra firm tofu package of excess water.
Place your tofu in between two paper towels and then place a heavy weight on top of your tofu. You may have to discard the paper towels a few times.
When the tofu is pretty dry, slice your tofu into bite sized pieces. Set aside.

In a bowl, place 3/4 cup of tapioca flour. 1/2 tsp of salt, onion powder, & garlic powder. Place your tofu inside & give it a good shake until your tofu is completely covered.

Warm up a pan to low medium heat & arrange your tofu inside. It takes time, but worth the effort to lightly brown your tofu on all sides. This will ensure it will be crispy.

Meanwhile in a bowl, combine:
Orange Maple Glaze:
1/2 cup of orange juice
1/4 cup of maple syrup
3 T soy sauce
1 T of lime juice
1/2 tsp onion & garlic powder

Combine tofu inside & stir gently to coat. Pour entire content into a pan & let it warm to medium heat. Watch it carefully as it will liquid will burn quickly. Remove from heat once sauce starts to thicken & get sticky. Leave aside.

1 small onion
1 tsp miso paste
1 can coconut cream/milk chilled & remove only cream.
1/2 tsp of salt
1 tsp onion & garlic powder
1 tsp coriander paste
1 vegetable cube
1 large mango
Half a zucchini, sliced
Noodles, cooked & drained to add to the pot
1/4 cup roasted cashews, garnish
1/2 cup chopped cilantro, garnish
Mango slices, garnish

In a deep pan, sautee your onion until translucent.
Add in the remainder of the ingredients except the mango & let it simmer.
Add it to a blender, w/ your mango and blend until creamy.
Add it back to the pan w/ your zucchini & cashews, if desired. Add in more water to thin the sauce. Check to taste & add in a splash of lime, salt or garlic/onion powder.
add in your noodles. Switch off heat. Serve with your tofu.
