Tempeh and Roasted Pepper Tacos.
Chunks of onion, red and green pepper and tempeh generously marinated in a chipotle salsa and melted coconut oil roasted until soft, I’d cut everything carefully to put on skewers but ended up just roasting altogether. With some salsa made from grilled/charred tomato, red chilli, bits of left over red pepper and onion, with juice of a lime and some coriander and salt.
Coconut oil is the ‘goose fat’ of the plant world, it really adds that tasty but unhealthy magic to tempeh.
