✨Shiitake & Jackfruit Gyoza✨

I went to my local Asian supermarket the other day, grabbed the last pack of gyoza wrappers they had left (love when that happens πŸ™Œ) and used them to make these super tasty gyoza! As you may already know, I love making food that requires repetitive actions, like filling and folding gyoza… I just find it so relaxing! πŸ˜… so obviously I thoroughly enjoyed making these absolutely delicious shiitake & jackfruit ones! They have such an amazing filling, so flavourful! And if you don’t have jackfruit available to you, just use tofu instead! Enjoy! 😍

INGREDIENTS
(35-40 gyoza)
β€’gyoza wrappers
Filling
β€’1 shallot, chopped
β€’1 can of jackfruit, squeezed and pulled apart
β€’2 garlic cloves, minced
β€’1 tbsp ginger, minced
β€’200g shiitake mushrooms, finely chopped
β€’2 carrots, grated
β€’250g cabbage, finely shredded
β€’3 spring onions, finely sliced
Filling seasonings
β€’2 tbsp soy/tamari sauce
β€’1 tbsp rice vinegar
β€’1 tbsp miso paste
β€’2 tsp sesame oil
β€’s&p to taste
Dipping sauce
β€’3 tbsp soy/tamari sauce
β€’1 tbsp rice vinegar
β€’1 tbsp agave/maple syrup
β€’1 tsp sesame oil
β€’1 tsp sriracha (optional)
Garnish
β€’spring onion
β€’sesame seeds

METHOD
Whisk together filling seasonings & set aside. Heat up some sesame oil in a pan, add shallot & jackfruit and fry until browned. Add garlic & ginger and sautΓ© until fragrant, then add all veggies and cook for a few mins until soft. Add seasonings, mix well and cook for 1 more min. Set aside to cool. When cool, grab gyoza wrappers and place 1-2 tsp of filling in the middle of each wrapper. Dip your finger in some water and wet edge all around. Fold wrapper in half and pinch together edges (pleats optional but fun to do πŸ˜‰). Heat up some more sesame oil in your pan and fry gyoza for about 3 mins until bottoms turn golden brown. Add 60ml of water, cover with lid and steam for 3 mins. Remove lid and let rest of water evaporate, then add a bit more sesame oil to finish browning gyoza. Sprinkle on garnishes, serve with dipping sauce and dig in!
