BLACK BEAN FRIED RICE WITH TOFU, GREENS, MANGO AND CASHEW NUTS

1 cup basmati rice
1 block tofu
1 handful cashew nuts
1 green ball pepper
2 cups of kale, tightly packed
1/2 mango
2/3 cup leeks
1/2 onion
3 cloves garlic
1 knob ginger
1/2 cup black bean sauce
3 tbsp agave syrup
1/2 lemon juiced
3 tsp soy sauce or tamari
2 tbsp sesame or sunflower oil
1/3 tsp turmeric
1 handful coriander
pinch black pepper
black sesame seeds and chopped coriander to garnish

1. Boil the rice as per packet instructions.

2. In a shallow pan, dry fry cashews until they are slightly browned and fragrant.

3. In a deep frying pan, fry chopped onion in 2 tbsp of sesame oil until translucent, add chopped garlic, ginger, leeks, green ball pepper (cut into stripes) and stir fry for about 3 minutes. Add kale, soy sauce, agave syrup, turmeric, black pepper, lemon juice and stir fry for another 2 minutes. Turn off the heat.
4. Add 1 tbsp sesame oil to a shallow frying pan. Slice tofu into 1 cm cubes and fry on medium heat, stirring, until the tofu cubes are golden on all sides.

5. Slice mango into 1 cm pieces. Add mango, rice, fried tofu cubes, cashew nuts and black bean sauce to the pan with the stir-fried vegetables and stir until everything is nicely incorporated. Turn the stove on and stir fry for 2 minutes.

6. Pack the mixture tightly into a bowl and cover with plate. Turn the plate over, remove the bowl. You should have a nice tower of your fried rice. Garnish with black sesame seeds and some fresh coriander
