Are you in lockdown? Here in Ontario we are in lockdown with schools closed 🥺 with all thats going on right now I’m taking comfort in cooking and eating good food.
Like these simple spicy beans! Super easy to put together (I’ll be posting a reels on it later this week) and very delicious. If you have kids just add less spice for a milder version 😋
•1 tbsp sesame oil
•2 cans of white kidney beans
•1 white onion, diced small
•4 Garlic cloves, sliced
•3 fresh tomatoes, diced or 1 can of diced tomatoes
•1 cup of water
•1 tbsp oregano
•1 tbsp crushed red pepper
•splash of soy/tamarin sauce
•optional: chopped spinach, endive, or kale
Over medium high heat add your sesame oil and onions to a pan. Once the onions start to sweat add in the garlic and a bit of salt. .
Once the onions are translucent add in the remaining ingredients (except for the greens)
Cover and let that cook up for 10 minutes. If you want to add greens then add them now along with a splash of soy sauce. Cover and turn off the heat. Let it sit for a few minutes to wilt the greens. .
That’s it. Serve over mac and cheese, fries, baked potatoes or eat as is! .
