1 onion, thinly sliced
1 chilli
1 tablespoon tamarind or 2
3 tablespoons water
2 tbs. soy sauce
1 tbs. sugar

1. Heat oil In a large nonstick skillet. Add cubed potatoes and fry until they are half cooked.

2. Add minced garlic, onion and chili. Continue cooking, stirring occasionally, until the potatoes have crisp edges.

3. Tamarind Sauce: Mix tamarind, sugar, soy sauce, and water. Pour over fried potatoes and stir fry to coat evenly. Serve hot.
